What It’s Really Like to Stay at Ashford Castle

A stay at Ashford Castle feels like stepping into a storybook where misty mornings with wolfhounds, afternoons of falconry and horseback riding, and elegant evenings all come together in a setting that’s both grand and genuinely welcoming. With rich history, exceptional dining, and immersive experiences on a stunning estate, it’s a destination that blends luxury with a sense of ease that makes it unforgettable.

There are luxury hotels and then there are places that feel like stepping into a completely different world. Ashford Castle is the latter.

It’s the kind of place where mornings start with mist rolling over the lake and quiet walks alongside Irish wolfhounds, and afternoons are spent with hawks flying through the trees or riding horseback through the estate grounds. Evenings end with live music echoing through candlelit rooms. It’s polished without feeling stiff, immersive without feeling overdone, and somehow manages to feel both grand and completely approachable at the same time.

Because despite the chandeliers and formal rooms, you’ll just as easily see guests wandering the grounds in wellies and raincoats as you will dressed up for dinner. It never feels stuffy or overly formal. It feels warm, welcoming, and quietly luxurious.

But what is it actually like to stay there?

Getting To Ashford Castle

From Dublin Airport, it is about a 2 hour 45 minute drive to the castle. I’ll be honest, the drive itself isn’t particularly scenic for much of the journey. So unless you plan to pair Ashford with Dublin, you may want to opt for one of the other closer airports. 

However with that said, if you arrange transfers through the hotel, they elevate even the transportation part of the experience in a way that feels very ‘Ashford’. Waiting for you is a perfectly branded Ashford Castle snack pack, beautifully presented and filled with artisan touches. Think of a fresh sandwich with cheese and handmade jam, freshly squeezed lemonade, and little treats that make the ride feel like a sneak peak of what’s to come.

  • Ireland West Airport Knock is just about 1 hour away

First Impressions

The arrival at Ashford Castle is where it really starts to feel magical. You drive through the gates of the estate and as you approach the castle you cross over the moat and pull up to the iconic wolfhound statues. It’s grand in a way that immediately makes you sit up a little straighter. But the moment you step inside, that grandeur softens into something much more inviting.

The lobby feels cozy and warm, not overly formal. The concierge desk is surrounded by wellies and raincoats, guests coming and going from walks around the estate, which instantly signals that this isn’t a place where you have to tiptoe around or feel “dressed up” all the time. And then you step into the Grand Hall. It’s one of those spaces that makes you pause for a second. Crystal chandeliers overhead, a fireplace glowing, and straight ahead are the perfectly manicured gardens rolling out toward the lake. It’s stunning, but still warm. Impressive, but not intimidating.

That balance between grandeur and comfort is something Ashford does incredibly well, and you feel it from the very first few minutes.

The History That Gives It Soul

Ashford Castle isn’t just beautiful. It has real history and depth behind it with origins dating back to the 13th century. The Guinness family purchased the estate in 1852, when it was much smaller, consisting of an oak hall and a single tower. They expanded it with grand Victorian additions, shaping much of what you see today.

In 1939, it opened as a hotel and it’s been welcoming guests ever since. Fast forward to 2013, when the Tollman family took ownership and restored it into what it is today: one of Ireland’s most iconic luxury stays.

The Family Behind the Experience

The current experience at Ashford is deeply tied to the legacy of Stanley Tollman and his wife. They started with a small hotel in South Africa, eventually building what is now the Red Carnation Hotel Collection. Their first major property was The Chesterfield Mayfair and from there, the brand grew into a global portfolio of intimate, highly personalized luxury hotels. You’ll notice subtle nods to South Africa throughout Ashford, a reflection of their roots.

And the name “Red Carnation”? It comes from Stanley himself, as he believed the flower symbolized luxury and wore one on his lapel every day. Today, the brand is led by their youngest daughter, who continues that same warm, detail-driven approach to hospitality. And you feel that everywhere, from the service to the smallest design touches.

Who It’s Actually Perfect For

What surprised me most is how wide the appeal is, without losing its sense of identity.

During my stay, I saw:

  • Young families with kids fully swept up in the magic of castle life
  • Couples celebrating honeymoons, anniversaries, and milestone birthdays
  • Older couples and friend groups enjoying a slower, activity-filled but unhurried experience

It’s rare to find a place that genuinely works across generations like this, but Ashford does it effortlessly.

The Rooms at Ashford Castle

There are 83 rooms, suites, and one standalone accommodation: The Boathouse.

A few things to know:

  • A lake view is absolutely worth it
  • If you want that “I’m a Prince/Princess staying in a castle- ” feeling, go for a suite or stateroom
  • Deluxe Queen Family Rooms are the best option if you need two beds
  • The Boathouse is ideal if you want total privacy. It’s essentially a private one-bedroom hideaway on the estate, but it is not located in the castle.

The Food & Dining Experience

Dining here isn’t just about meals. It’s very much a part of the overall experience. Some of the standout dining options are:

  • Dinner at Cullen’s at the Cottage (cozy, elevated comfort food- my meal started with crab and ended with rotisserie chicken)
  • A formal breakfast in the George V Dining Room with made-to-order hot dishes and one of the most beautiful croissants I’ve ever seen
  • Afternoon Tea in the Connaught Room is classic, elegant, and worth slowing down for
  • Pre-dinner drinks in the Billiards Room or the underground wine cellar
  • A very unique dinner at Stanley’s, an intimate, 9 seat American diner concept as a nod to Stanley Tollman
  • After dinner drinks and live Irish music in the Drawing Room (which changes nightly and is genuinely entertaining)
  • And for something more playful, The Dungeon- a slightly kitschy medieval style Irish pub with steaks and South African influences

One important note: some restaurants are seasonal, so if you’re visiting in winter, expect a slightly more limited selection.

The Activities You Shouldn’t Skip

You could easily spend a few days here and never leave the estate, and not feel like you’re missing anything. Here’s what stands out:

Falconry (The Hawk Walk)
This is the must-do. Walking through the woods while hawks fly above you and land on your arm is one of those experiences you don’t forget.

Wolfhound Walk
Offered daily in the mornings, when the estate still feels quiet and misty. The dogs are massive (mid-waist height on me at 5’5”), and the handler brings a dry, slightly snarky humor that makes it even better.

Horseback Riding
A beautiful way to see the estate grounds, especially in the afternoon.

Spa
Perfect after a long travel day. It’s quiet, calming, and beautifully designed.

Kitchen Garden & Cooking Experiences
Great if you love food, gardening, or both.

Other options include clay shooting, fishing, boating, kayaking, golfing, and even a private cinema complete with popcorn.
